The former is a combination of <em>paille<\/em> (straw) plus the suffix <em>-asse<\/em>. Paille comes from the Latin <em>palea<\/em>, from the Ancient Greek <em>\u03c0\u03ac\u03bb\u03bb\u03c9<\/em> (pallo = to shake) because you have to shake the straw to extract the grain.
