I'm not clear on exactly what Pali was or is. My impression is that Pali is primarily a writing system that can be used to write several languages. These could include mainly Lao, Khmer and Burmese. But these languages are not written in Pali on a daily basis. Am I correct?

Actually, Pali is a medieval Indo-Aryan language that was originally written in Brahmi. It survives today as a liturgical language of Buddhism, especially for the Hinayana/Theravada schools.
